Hi friends, happy Wednesday! I hope you all had a fabulous Halloween. I cannot believe that it is already Wednesday and that we are halfway through the week!
Since I shared a glimpse into my weekly workouts on Monday, I thought it would be fun to share with you what a day of eats looks for me. Before I dive into things though, I just want to remind you that everyone is different and that the comparison trap is waste of time. This is what works for me, my body, and my activity level. Every day is a little a different depending on activity, time of the month, what did I do last night, even what the weather is like. I do not count calories, macros, or follow a specific diet of any kind. I eat whole, real foods that make me feel my best. I listen to my cravings and honor my body. I definitely wasn’t always this way, but we’ll save that for another post 🙂
What I Ate Wednesday
7:00AM Gluten free sourdough topped with Wild Friends Chocolate Coconut Peanut Butter and Dang Foods Coconut Chips
I typically workout first thing in the morning and that makes me a big breakfast person. Today however, I was meeting friends at 5:30pm for a high intensity Pilates class at Fierce45 so I kept breakfast light. I also knew I had my egg bake coming in a few hours and wanted to save room for that!
12:00PM Easy Vegetarian Egg Bake (2 servings)
I posted this on the blog yesterday afternoon and after spending the morning cooking, photographing, and working I was starving! The one piece I planned on turned into two and every bite was delicious.
1:30PM Kale salad with shredded carrots, peppers, and Primal Kitchen Green Goddess Dressing
You guys, this salad was so pathetic, I don’t even want to post a picture of it. 2 servings of my Easy Vegetarian Egg Bake left me pretty full, but I really wanted some more greens to round out my lunch. I didn’t have a ton in the fridge so I threw together what I could!
2:00PM Grande Coconut Milk Cappuccino from Starbucks
I totally forgot to snap a picture of my coffee, but I think everyone has seen a Starbucks cup by now! I met up with a friend who also works from home from time to time and she surprised me with a cappuccino. I only drank about half because any caffeine after 1:00pm tends to mess with my sleep.

6:40PM Post-workout Reese’s Cup
There was a bowl of Halloween candy sitting in our entry way for Trick-Or-Treaters and I was starving, so I snagged a Reese’s. The protein in the peanut butter is good for workout recovery, right? 😉
7:30PM Heaping bowl of my Vegan Chili (recipe on the blog tomorrow!), topped with half an avocado
After I ate my Reese’s, I put the chili on the stove and pretty much paced around the kitchen waiting for it to be ready! This recipe is so good you guys. My boyfriend is my biggest food critic and he totally loved it. I topped mine with half an avocado and he topped his with half an avocado and some shredded cheese. I meant to ask him to pick up some Siete Foods chips for dipping, but it slipped my mind.
8:30PM One of Rachel Mansfield’s 4-ingredient Paleo Almond Butter Fudge Cups for dessert
